Yes, St. Patrick’s Day is tomorrow and then that means Easter isn’t far behind..wow, that’s crazy to think about!! I had all these great St. Patrick’s day projects and ideas in my head, but where does the time go?? I finally got my St. Patrick’s Day subway art printed and in a frame the other day. I chose this cute one from Lolly Jane Boutique.

The yummy desserts for St. Patrick’s Day are my favorite…I LOVE mint, so anything minty and green I saved. Although the dessert I made for St. Patrick’s Day doesn’t involve mint…mostly because my kids and husband don’t really like mint, so I decided to make something that everyone would love. I made Cream Cheese Cookie Tarts, adapted from the Betty Crocker recipe I shared at Valentine’s Day. Here’s a picture of the Strawberry Cream Cheese Cookie Tarts from Valentine’s Day.
I really wanted to make them last month, but didn’t get around to it, so I made up my own little St. Patrick’s Day version!
I really liked this recipe because it was very simple and didn’t require a ton of ingredients. In fact, you start with a pouch of Betty Crocker sugar cookie mix – so easy! Here’s the link to the original Betty Crocker recipe, but I’ll put my version of the recipe below.
St. Patrick’s Day Cream Cheese Cookie Tarts
Ingredients:
1 pouch Betty Crocker sugar cookie mix including 1/2 cup butter and 1 egg called for on cookie pouch
12 oz. cream cheese
1 1/4 cup powdered sugar
2 tablespoons milk
3-4 drops of green food coloring
1 can cream cheese frosting
Sprinkles
Step 1 – Make cookie dough as directed on package. Roll dough into 32 (1-inch balls); place in greased mini muffin tins. Press each ball in bottom and up sides of muffin cup. (I did this using a large round measuring spoon.) Bake at 350 degrees for 10 to 12 minutes or until edges just begin to brown. Cool 20 minutes. Remove from pan; cool completely.
Step 2 – Mix cream cheese, milk and powdered sugar with electric mixer on medium speed until smooth. Add food coloring and mix. Fill each cookie cup with rounded teaspoonful of filling. Top each cookie with frosting using a decorating tip and add sprinkles. Store in refrigerator.
Makes about 32 mini tarts.
Serve them up with a nice cold glass of green milk and I guarantee your family will love them!

I think these mini tarts would be perfect for Easter as well! You could use the strawberry cream cheese and put Easter sprinkles on them, or any other food coloring you wish…so fun!!
